I’ve been fighting a cold the past few days. Note: I did not say I have a cold. This is my husband rubbing off on me. He never says he’s sick. He exhibits symptoms. He has a sniffle. We take medicine. We tell ourselves we feel better. But, mostly, we spent the weekend sleeping. I did step out to meet up with some great friends and then for a quick dinner where I was served a scrumptious avocado crostini. It was the type of appetizer that makes you want to order another round (or two) and just cancel your entree. Instead, I told myself I could recreate it the next day for lunch.

Avocado with Pesto Crostini (inspired by Frankies 570)
Baguette (sliced)
Avocado (sliced)
Pesto (store bought is fine!)
Olive Oil
Sea salt
Heat olive oil in a skillet. Place sliced baguette (inside of bread face down) in pan and allow it to brown. Remove from heat and smear a thin layer of pesto on bread. Add slices of avocado. Sprinkle with sea salt. Enjoy!

*~* ♥ This just makes my mouth water looking at it !! Sounds good for lunch !! ♥ *~*
Thanks Sue! It’s perfect for lunch. Or dinner. Or midnight snack.
Yum! I really want to try this!
I am a pesto tortellini addict but lately have been thinking I should “branch out”

I simply wanted to just take a few moments and tell
you that I liked the post. I frankly don’t think that most people know how many hours of labor that gets put into doing a internet site. I am sure that this will be sort of random nevertheless it bugs me sometimes. At any rate great website.
