I’m a big believer that we learn from every relationship. That one relationship leads you to the next armed with a little more knowledge. Even the really lousy relationships that end in major heartbreak. Actually, you learn the most coming out of those. There are a string of lessons I learned from my major heartbreak, one of the best was a recipe frequently used by his family. Tomatoes roasted with parmesan and oregano make an excellent side dish. Now that’s knowledge.

Baked Parmesan Tomatoes
Ingredients:
2 beefsteak tomatoes, sliced into 1/2 inch horizontal slices
1/4 cup grated Parmesan cheese
1 teaspoon of oregano
Salt and freshly ground pepper, to taste
4 teaspoons extra-virgin olive oil
Preheat oven to 450° F.
Place tomatoes on a baking sheet. Top with Parmesan, oregano, salt and pepper. Drizzle with oil and bake until the tomatoes are tender, 15-20 minutes.
