I generally use nights like this to do dreaded household chores or waste the night away on the Internet, so this was very special time just for me and my dinner. Though I don’t have children yet, I so related to my sister’s post this week about needing to hit the reset button. This dinner and time was my reset button. It was so delightful.
4 teaspoons minced shallot
1 tablespoon minced fresh parsley
1 tablespoon fresh lemon juice
1/2 teaspoon minced peeled fresh ginger
1/2 teaspoon finely lemon zest
6 1/2-inch-thick diagonal baguette slices
2 pounds Manila or Littleneck clams, scrubbed
6. Add remaining lemon-ginger butter to juices in pan; stir on grill until melted. Pour juices from pan over clams. Serve with bread.
