Last week, I mentioned how I was working on creative presentation, particularly when nagging. Now I am testing the same “it’s all about how you present it” theory to our food. Although a chocolate chip cookie on its own is amazing, make it a sandwich and put it on a lollipop stick and everything changes. It’s an instant fun-lift. They are party ready and no more difficult than making a normal batch of chocolate chip cookies.
Ghiradelli cookies, Family Circle idea
1 1/8 cup flour
1/2 tsp baking soda
1/4 tsp salt
1/4 cup + 2 Tbl. sugar
1/4 cup + 2 Tbl. brown sugar, packed
1 tsp vanilla extract
1 cup Ghiradelli Milk Chocolate Chips
Filling (would also be awesome with ice cream!):
1 cup confectioner’s sugar
3/4 stick of butter, softened
1 tbs milk
30 lollipop sticks
Preheat oven to 375degrees. Stir flour, baking soda, and salt; set aside. Beat butter with sugar and brown sugar at medium speed until creamy. Add vanilla and egg, mixing on low speed until incorporated.
Drop batter by the teaspoonful onto two large baking sheets. Bake at for 9-11 minutes or until slightly browned. Cool.
On a medium speed, beat together confectioner’s sugar, butter, and milk until smooth, think frosting is created. Spread filling onto flat side of one cookie. Press a lollipop stick into frosting, then sandwich with a second cookie. Refrigerate, if necessary, until firm.
